Scrambled Egg Sandwich


Are you bored of the usual sandwich and want to try something else using bread? Why don't you try this egg sandwich which is both hot as well as spicy? This is a simple homemade sandwich which has scrambled eggs in it. It serves as a good breakfast recipe on lazy weekends.







Ingredients:



Sandwich Breads slices - 4 nos

Egg - 2 nos

Onion - 1 large size/chopped finely - 1/2 cup

Pepper powder- 1 teaspoon

Green chillies - 2,chopped finely

Mustard seeds and urid dal - 1/2 teaspoon

Curry leaves - 1 string

Turmeric powder - a pinch

Salt - to taste

Butter - 2 tablespoon





Method:



1) Trim the brown edges of the bread using a knife.

2) Break the eggs carefully and empty the contents in a bowl. Add salt, turmeric powder and pepper powder. Blend them well with a spoon and keep it aside.

3) Take a wide pan and heat oil on it.

4) When oil is warm enough, add mustard seeds and urid dal. Let the seeds pop up.

5) Add curry leaves, green chilies. After few seconds, add onions and saute them well.

6) When onion turn translucent, add the blended egg mixture and stir the contents continuously.

7) Stop the flame when the contents are fried properly without any uneven lumps.

8) Now apply butter on both the sides of the bread and heat them gently in a pan or a toaster.

9) Lay both the breads in a plate and spread out the egg mixture evenly on the surface of the bread.

10) Cover both the breads just like a sandwich and it is ready to be served.






BENGAL GRAM KAARA BOLI

This kaara boli with lots of bengal gram in it tastes divinely with the accompaniment of all the vegetables nicely blended in it. Instead of oil, pure ghee enhances the flavour when cooking this boli. Drumstick leaves which are chopped finely can be mixed to get a very delicious taste!



கடலைப்பருப்பு கார போளி

Ingredients:

Plain flour- 1/2 kilo

Bengal gram- 1/4 kilo

Carrot-1

Radish [small]-1

Onion-1

Coriander chopped-4 tbsp

Shredded coconut- half cup

Chilli powder- 1 tsp

Salt to taste

Procedure:

Cook the bengal gram to soft a texture and mash finely.

Sieve the flour.

Shred the vegetables finely.

Mix all the ingredients with salt and make a smooth dough mixing in enough water.

Make chappathies and cook on a hot tawa on both sides.

The delicious bengal kaara boli is ready!

Paruppu Keerai / Dal Spinach


Spinach is one of the nutritious vegetables. Tender Spinach is consumed in raw form in many westen countries because of its high vitamin and mineral content. Most of the time, I prepare this dal without onion, tomato and garlic and I am giving the recipe for it. You can do this dal in a jiffy and if you have time, feel free to add onion, tomato and garlic if you like to add. All the other methods are same.









Ingredients:



Spinach (Keerai) - 1 bunch

Toor Dal - 1/2 cup

Dry red chillies - 5 nos

Mustard seeds - 1/2 teaspoon

Urid dal - 1/2 teaspoon

Oil - 3 teaspoon

Salt - To taste

Turmeric Powder - 1/2 teaspoon

Cumin seeds - 1 teaspoon

Asafoetida - a pinch



Method:



1) Wash spinach twice in water and chop it finely.

2) Wash Toor dal twice or thrice in water until the water becomes clear.

3) Add Toor dal along with a cup of water in a pressure cooker and allow it to boil. However don't close the lid.

4) When the dal is half boiled(remove the foam using ladle that foams on the top of water), add spinach, cumin seeds, turmeric powder, salt and some water.

5) Close the lid of the cooker and wait for 3 whistles.

6) Allow the steam to subside. Then open the lid and mash the spinach dal mixture well with a masher.

7) Take a kadai (frying pan) and heat oil.

8) Add mustard seeds and urid dal. When they seeds start to splutter, add curry leaves and dry red chillies,asafoetida to it.

9) Add this to spinach dal mixture and stir well.

10) Dal Spinach (Parruppu Keerai) is now ready to be served with rice.









Note:

1) Add onion, tomato and garlic to get additional taste and flavor.
