My latest recipe, don't think these will last long:


Coconut bars

Ingredients
17 digestives
4oz butter
4oz sugar
1 can condensed milk
14oz desiccated coconut
12oz chocolate
2 tbsp peanut butter

Method
·        Preheat the oven to 170C
·        Crush the digestives and mix with the melted butter and sugar
·        Press into a 9” x 13”  baking tray and bake for 10 minutes
·        Meanwhile combine the milk and coconut
·        Spread this over the base, return to the oven for a further 20 minutes
·        Melt the chocolate and stir in the peanut butter
·        Spread over the coconut layer
·        Cool and slice into bars.
