I love herbs very much and try to add in every recipe I do. If I indian I add a lot of cilanto, mint, methi etc., if Italian I use a lot fo parsely, basil even on any meat dished. I use almost all the varieties of herbs in all the forms fresh or dried. They give a very nice aroma and flavor to the recipe and healthy too. I just feel it freshens our mind. Today Shoj was not coming home for lunch so I decided to do something simple and one pot meal for me and Anush, so made this ....but after I tasted it liked it so much and was sure that Shoj will like it too, so reserved some for him too. He also tasted after he came from office and liked it so much.

2 small bunches Basil stems removed and washed
10 mini Bella Mushrooms sliced
1 small Onion chopped
Salt and Pepper to taste
1 tbsp Butter
1/2 tsp Olive Oil
2 cups Basmati Rice
3 1/2 cups of Water
Method:
----------
1. In a pan add butter and when it's hot enough, add onions and mushrooms, add salt and pepper, once and saute on medium high flame until the mushrooms are cooked and the water is all evaporated.
2. Meanwhile add the basil leaves and olive oil in a mixer and blend it to a paste.
3. Meanwhile cook two cups of rice with 31/2 cups of water in a rice cooker.
4. Add the basil paste to the rice and stir once, then add the cooked rice and mix gently, not breaking the rice.
5. Serve it hot with your choice of sauce or eat it as it is...very tasty and very flavorful pilaf.
