This week I got so many oranges from the grocery store. They were so awesomely sweet and little tangy, the way I like it. Whenever I think of making anything with orange will remind me of the Chinese Orange Chicken, but I can't make this today :(, as we don't eat on Tuesdays and Thursdays.
I thought why not make orange sweet corn. Shoj said, hmm that does not sound like a good idea...now I had to prove him that this can be delicious. I assured him that I will make this very tasty for you. Now the challenge begins... I didn't want to deep fry so baked it and made this awesome sauce to ....you know what it was a winner....Shoj ate it and asked for more. He liked it a lot. I was so happy and liked it very much too. Anush didn't like it much because it was bit spicy for him, will surely make it less spicy for him next time.

Cooked sweet corn has significant antioxidant activity, which has been suggested to reduce the chance of heart disease and cancer, although this has not been definitively proven in practice.[citation needed] "There is a notion that processed fruits and vegetables have a lower nutritional value than fresh produce. Those original notions seem to be false, as cooked sweet corn retains its antioxidant activity, despite the loss of vitamin C," says Rui Hai Liu assistant professor of food science at Cornell University. The scientists measured the antioxidants' ability to quench free radicals, which cause damage to the body from oxidation. Cooked sweet corn also releases increased levels of ferulic acid, which provides health benefits, such as battling cancer. "When you cook it, you release it, and what you are losing in vitamin C, you are gaining in ferulic acid and totalantioxidant activity."
Ingredients:

2 Corn on the cobs (I used fresh corn)
1 tbsp All Purpose Flour
2-3 tbsp Corn Flour
1/4 tsp Salt
1/4 tsp White Pepper Powder
1/4 tsp Hoisin Sauce
1 tsp Tomato Ketchup
1/4 tsp Soy Sauce (I used Organic)
Orange slices for garnish
To make Orange Sauce:

4 tbsp Orange Juice
1 tbsp Lemon Juice
1 tbsp Corn Flour/Starch
Salt to taste
1/4 tsp Ginger-Garlic paste
1 tsp White Pepper powder
1/4-1/2 tsp Red Pepper flakes
1 bunch Green Onions (white and green part seperated)
1 tsp Hoisin Sauce
1/2 tsp Soy Sauce
1 tsp Tomato Ketchup
1 1/2 cup water
Method:

1. First remove the corn off the cob. Place the corn in a mixing bowl.
I am providing a video to make it easier for you to understand and to get better results.
2. Now add all the ingredients except the orange slices kept for garnish, mix well, add 1-2 tsp water if needed.
3. Preheat oven to 400F or if using a toaster oven (as I did), no need to preheat).
4. Line the baking sheet with parchment paper and spray little oil and spoon it on the baking sheet and bake them for about 30 mins or until golden brown and crisp.
5. In a sauce pan combine all the ingredients, except the green part of the green onion, and corn starch, whisk it and bring this liquid to a boil.
6. Now in a small bowl mix, the corn starch and little water and add it slowly to the liquid sauce and keep stirring, make sure there are no lumps and add more water if needed.
7. Now cook the corn starch for a min or two and add the baked corn and gently scoop the sauce over it until all the corn is well coated.
8. Off the flame and allow the corn to marry well with the sauce, it will become thicker when it starts to get less warm.
9. Sprinkle the green onion over the top and serve with slices of orange. We ate this as a dinner and it filled out tummy with lots of flavor and goodness of Corn and Orange. :-)
