Sevai/Rice Noodles, a Delicious and Filling Breakfast, so common in many South-Indian Homes!!!! We have a Indian Grocery/Super Market Nearby (20 minutes by Walk from our place), where we get all Indian Brand Food Stuff! I was very happy to find MTR Rice Sevai there, and joyfully picked up 3 packets. Made them for Breakfast on a Weekend Morning!!! mmm!!! Hubby Dear was so Happy to see something New for his Breakfast other than the Normal Idly/Dosa/Upma/ Bread!!!!!!
Ingredients
200gm Sevai/Rice Noodles
1 Potato, Peeled and Cut into small Cubes
1 Capsicum, thinly Sliced
3 Green Chillies/Red Chillies, slitted lengthwise
1/4 cup Green Peas (i used Frozen)
1 Large Onion, Chopped
1 tsp Ginger Juliennes
1 tsp Coriander Powder
2 Sprigs Curry Leaves
Fresh Coriander for Garnishing
Salt to taste
Method
Cook the Rice Noodles according to the Pack Instructions. Normally we need to boil twice the amount of Water, Add the Rice Noodles/Sevai, Cook for 2-3 mins and Put off the Stove and Keep it closed for few more minutes, drain and keep!!!!
Heat oil in a pan, Splutter mustard seeds, add green chillies, Curry Leaves, Fry for a second or two. Add Onions and Saute till translucent. Add all the Veggies One by one, add Coriander Powder and Salt and Saute Well. Now the add Sevai/Rice Noodles and Mix Well. Take Care not to Mash the Sevai/Rice Noodles!!! Mix gently!!!
Cover and Cook for 2-3 Minutes. Put off the Stove, Garnish with Fresh Coriander and Ginger Juliennes. Serve Hot with any Chutney!!!! We enjoyed with Thick tomato Chutney!!!!
