Quick Vegetable Pizza




I like this quick version because it helps me out when I do not have time to prepare home made pizza dough and sauce. As only topping is prepared at home, it is easy to limit the quantity of cheese and takes only 15 minutes of time. Pizza crust and pizza sauce is available in almost all grocery shops.



Basic Information:

Prep Time: <10 minutes
Cooking Time : 15 minutes
Serves: 2








Ingredients:



Pizza crust - 1 any size

Pizza sauce - 1 tablespoon or as required

Mixed vegetables - 1/2 cup (I added onion,yellow capsicum, tindora)

Grated cheese - 1/4 cup or as required

Green chillies - 2, chopped finely

Pepper powder -  1/2 teaspoon

Salt - to sprinkle

Dried herbs - to sprinkle (I added oregano,thyme) (optional)



Method:



1) Take a pizza crust and spread pizza sauce followed by grated cheese.

2) Decorate with vegetables of your choice and green chillies with even intervals.

3) Sprinkle few grated cheese on top of the vegetables followed by salt and pepper.

4) Throw dried herbs if using.

5) Preheat the oven to 150C.

6) Keep the pizza inside and bake it for 10-15 minutes or as per the instructions given in the pizza crust.

7) Cut them into slice and serve hot with any sauce.





Note:

1) Usage of vegetables are absolutely your choice. I used the vegetables which were available by the time of preparation.



2) Try to do different topping as per your wish and enjoy.

Thakkali Sadam / Tomato Rice






A typical south Indian food, best suits for lunch box can be prepared in two ways. One method is prepared using fresh ripe tomatoes and boiling rice with them. Another method is preparing tomato gravy and rice separately and mixing them together to make a rice. Both the methods are very simple. Here I am posting the first method cooking tomatoes with rice to gether.




Basic Information:






Preparation Time: 10 Minutes


Cooking Time: 20 minutes


Serves: 2






Ingredients:



Tomato - 3 medium size, finely chopped

Rice - 1 cup

Onion - 1 medium size, chopped

Ginger - 1 teaspoon, minced

Garlic - 1 teaspoon, minced

Cloves - 1 no

Fennel seeds - 1/2 teaspoon

Curry leaves - 1 string

Oil/butter/ghee - 4 teaspoon

Red chilli powder - 1 teaspoon / to taste

Coriander powder - 1 teaspoon

Coriander leaves - 1 string, for garnishing

Mustard seeds - 1/4 teaspoon

Salt - to taste



Method:



1) Wash rice two or three times thoroughly using water. Keep aside after washing.

2) In a steam cooker, Heat oil and add mustard seeds and fennel seeds.

3) when they crackle, add crushed clove and curry leaves.

4) Add chopped onions and saute till they are translucent.

5) Add minced ginger and garlic. Saute for few seconds.

6) Add chopped tomatoes and saute till they are completely mashed.

7) Add red chilli powder and coriander powder and fry till the raw smeel of masala goes off.

8) Add washed rice and add 2 cups of water. Add salt to taste.

9) Mix well and cover the cooker using the lid.

10) Wait for 3 whistles. When steam releases from cooker, mix the rice gently. Garnish with coriander leaves.

11) Tomato rice is ready and Serve hot with any raitha.
