Broccoli Ground Chicken Capellini (Angel Hair Pasta)


Lately I didn't make much pasta, because I like trying new recipes when Shoj is there and the whole week he's there I try to make the regular food, as I think that he misses the regular food than fusion or International as because he can have other food anywhere outside. Well this recipe I tried a few weeks back when Shoj was not here and fell in love with it, it was simple and delicious at the same time. But later made few other recipes which seemed to get my attention in posting them first and this remained in the drafts. well here it is...

Ingredients:

1 pkg Capellini or Angel Hair Pasta
1/2lb Ground Chicken
1 small Onion chopped
2-3 pods of garlic chopped or crushed
Broccoli broken into florets
1 tsp Olive Oil
1/4 tsp Red Pepper Flakes
Salt and Pepper to taste

Method:

1. In a big heavy bottom sauce pan add enough water to cook the pasta. Bring the water to a boil, add the pasta, stir it once, add enough salt and cook it for about 7-8 mins or until the pasta is almost cooked i.e., al dente.


2. Strain the pasta in a colander and run cold water to it.
3. In another sauce pan add oil, when it's hot enough, add onions and garlic and saute it until translucent.


4. Now add the ground chicken, salt and pepper, break down the lumps with a wooden spoon and brown it up a little bit, until all the water is gone and it's completely cooked.
5. Now add the broccoli and kinda cover and cook it along with the ground chicken for about 5 mins.


6. Make sure the broccoli is also cooked but still crunchy and bright in color.
7. Now add the pasta water and pasta and gently stir to mix in with the chicken and broccoli and transfer it to a serving bowl and garnish it with some grated cheese, i prefer parmesan cheese, you can choose any cheese of your choice.

Milkmaid-Nutella Chocolatey Fudge

For this month's Blog Hop Wednesday i m paired with Archana of The MadScientist Kitchen. It was my Hubby's Nephew's Birthday, he is two year's old now. i wanted to make something Sweet for him other than the cake which definitely will be the usual. When i saw this Burfi/Fudge @ archana's space, i thought it would be perfect, as it was soft, chewy for him to enjoy. I made a little change to the recipe and it came out so well. 
Ingredients
1 tin Sweetened Condensed Milk
2 tbsp Chocolate Powder
3 tbsp Nutella Chocolate Spread
1/4 Cup Butter 
1/4 Cup Silvered Almonds
Method
  • In a Non-Stick Pan, take all the ingredients and Cook it in a Medium flame.
  • Keep a Flat-plate greased with little oil/ghee ready.
  • When it starts leaving the pan and comes together, transfer it to the greased plate and let it set for 30-minutes.
  • Cut into pieces using a sharp knife and refrigerate for 1 hour. Another easy method would be to roll them into small balls/Laddus and refrigerate for an hour and Serve.
  • They just melt into your mouth with every bite.
