Rajma(Spicy kidney beans Gravy)



Everyone has their own way of making gravies. I have tried different methods and liked all of them. Today I made a simplified version of Rajma by grinding all the ingredients together and simmering the mixture for some time. It was very tasty. My husband was carried away with the aroma of Rajma when he entered the house.

Ingredients:
To grind to a fine paste:
Onion(cut into big pieces)-1 small
Tomatoes(cut into big pieces)-4 small
Ginger-1 inch piece
Garlic pods-3
Coriander leaves-a handful
Cashews-10
Cinnamon-2 inch stick
Cloves-4
Star anise-1(crushed)
Cardamom-1
Turmeric powder-1/4 tsp
Red chilli powder-as per your spice level
Badshah Kitchen king masala-2 tsp
Garam masala powder-1 tsp
Coriander powder-1 tsp
Salt

Other ingredients:
Red kidney beans(Soaked for 7 hours)-1 cup
Oil-3 tbsp
Yogurt-1/4 cup
Jeera-1 tsp
Coriander leaves-to garnish
Lime juice-from 1/2 lime

Method:
Grind all the ingredients listed above to a fine paste without adding water.
Pressure cook red kidney beans till soft.
Heat oil in a pan, add jeera. When it crackles, add the ground paste. Add some water and bring it to gravy consistency. When the mixture starts boiling, simmer and let it cook on very low flame till oil starts to float on top(about 1/2 hr). Add cooked kidney beans and yogurt and simmer for another 10 minutes. Squeeze lime juice on the gravy just before serving. Garnish with coriander leaves and serve with hot chapathis or rice.

Onion & Sweet Corn Rolls

These rolls taste very good probably because of the onion. A boy couldn't resists to have one when it's freshly bake from the oven (but he was only allowed to eat after an hour when the rolls cool down). I reheat a leftover roll in the 2nd day at 100'C for eight minutes, it's still very soft and yummy :) Probably is chemistry from the potato mashed
Recipe:
(A) 200g bread flour
20g plain flour
15g caster sugar
1/2 tsp salt
1/2 tsp yeast
20g egg whites
100g water
20g potato mashed

(B) 15g unsalted butter
(C) 5g butter
20g finely chopped onion
100g sweet corn
1/8 tsp freshly ground black pepper
(D) Mayonnaise
1 teaspoon dried parsley

How I made it:
  1. For the fillings, finely chopped the onion and fry it in a pan at low heat until soft but not caramelize. Drain the sweet corn and add to the onion fry for another minutes. Add pepper to season. Set aside to cool and ready to use.
  2. Mix ingredients (A) at low speed using a dough hook mixer, then turn to medium speed until it become a smooth dough.
  3. Add in the unsalted butter and knead with low speed until the butter combine with the dough. Turn to medium speed continue the kneading process until it become a smooth and elastic dough.
  4. Place the dough into a lightly grease bowl and cover with cling wrap to proof for 80 minutes.
  5. Divide the dough into 5 portions and round them into small balls. Let it rest for about 10 minutes.
  6. Roll out each doughs into a longish shape and fill with the onion and sweet corn. Roll in into a sausage shape and proof for 25 minutes.
  7. Egg wash the doughs and mark few oblique line at the surface with a sharp knife at each doughs then squeeze some mayonnaise at the oblique line and sprinkle with some dried parsley. Let it continue for another 5 minutes.
  8. Bake at 180'C preheated oven for 18 minutes until golden brown.

Oatmeal porridge with fruits and nuts



Oats are great for breakfast. They are healthy, filling and delicious.

Ingredients:
Instant quick cooking oats(I used maple and brown sugar flavor)-1 packet
Milk-1 cup
Banana-a few thinly sliced pieces
Apple finely chopped-a few pieces or any fruits
Walnuts-2

Method:
Boil milk. Turn off the heat. Add quick cooking oats. Transfer the mixture to a bowl.
Add sugar if needed. Add sliced fruits and nuts.
