Fettucini Alfredo topped with Basil and Croutons


I know it's a new combination of pasta and croutons, but it tasted too good. We usually see pasta topped with bread crumbs right, so I thought if we can use bread crumbs, why not use croutons. I also combined some ground turkey with Salmon too in this dish. Basically I wanted to use many ingredients in one dish, it's that simple. :-) 
So try it and let me know, I bet you will like it.

Ingredients:

1 pkg Fettucini pasta
2 cups Alfredo Sauce
1/2 lb ground Turkey
1 Salmon fillet
1/2 cup Croutons
1 bunch fresh Basil leaves
1 tsp Red Pepper flakes
Salt and Pepper to taste
1/4 cup grated Parmesan cheese
1 pod garlic chopped
1 tsp Olive oil

Method:

1. In a heavy bottom pasta pan add enough boil for pasta and when it comes to boil, add salt and fettucini pasta and cook it for about 7-8 mins or until al dente.
2. Drain the pasta in a strainer and run it under cold water, so that the pasta stops cooking further and keep it aside.
3. Cut the salmon fillet to lengthwise pieces.
4. In a wide sauce pan add olive oil and when it's hot add garlic and now add the ground turkey and brown it while cutting the big chunks with a wooden spoon for about 7-8 mins.
5. Now cover and cook for about 5 mins more in medium low flame.
6. Open the lid and add pasta and fettucini sauce and cook for about 2-3 mins until all the meat and the pasta is coated with the sauce.
7. Now add the salmon and cover and cook for about 2-3 mins and off the flame and let it stand with the lid for about 5 mins, so that the salmon will cook in the steam.
8. On a cutting board gently roll the basil leaves and cut across.
9. Carefully plate the fettucini on to plate without breaking the fish pieces and top it with grated Parmesan cheese, croutons and basil and serve it hot or warm.

What is HEALTHY EATING?

Hmm... sounds like a question that you asked yourself sometime??... Often this question pops up in my mind, whenever I think of any whole grain, organic or any kind of food that usually everyone thinks it is. But how do we know exactly. Well I would like to help the people who also think like me. Healthy eating is eating well balanced food and not dieting or skipping food. The best phrase I can say is don't over eat. I know what you are thinking...but listen to you mind and heart when you see you favorite food and feel like jumping on to it. Nobody is going to stop you from eating, but after you eat enough, you mind will tell you to stop at some point of time, when it gets message from your stomach to your brain that "I am full", now ...if you stop, then it's healthy eating, else it means that you are over eating, and that leads to all the problems.

So here is a healthy eating pyramid that you should include in your foods. Non vegetarians can omit the meat and  include more fiber and proteins in your diet.

Panakam



Celebrating Rama Navami with this delicious Panakam!

Ingredients:
Grated Jaggery - 1/2 cup
Water - 2 cups
Dry ginger powder or fresh grated ginger - 1/2 tsp
Cardamom - 1/4 tsp
Honey - 1 tbsp

Method:
Mix all the ingredients. Stir well until jaggery dissolves in water completely.
Filter and serve chilled.
