Guest Event - "ONLY MANGO" - ROUND UP

Summer is one of the best season of the year where we get to go out and do lot of things and of course try on new food which is more fresh, refreshing and with lots of fresh produce to try out right from the garden.

So here is the most common fruit I always remember about summer "Mangoes". We almost have so many varieties of mangoes back in India, and am sure i tried all of them at least once, being a national fruit :). I miss them a lot being here in the US. So in order to keep my taste buds alive I thought of guest hosting this event for this month.

So here it is....

Pari of foodelicious is the mother of this series event where each blogger of interest can choose her own choice of ingredient for this event to host it every month and I decided to host for this month and so decided to choose mango. Dish It Out #13 - BLACK BEANS AND BELL PEPPERS - Round Up

Hi Friends,

Here is another Event that I am guest hosting for the month of June starting from the 1st to 31st. This event was started by my friend/blogger Vardhini of "Cooks' Joy" and I choose "BLACK BEANS AND BELL PEPPER" as this months theme on this event.

I always loved this combo especially if it is black beans and red bell pepper....wow my mouth is already watering! :) I prefer to use roasted bell pepper which i feel it brings out the flavor of the peppers. Well for this event I choose two of many ingredients as the main ingredient and now I leave it up to all my fellow bloggers to get creative and come up with colorful, flavorful and healthy recipes.

So lets hop on to the Event Rules:

* You need to make a dish using both the ingredients (black beans and bell pepper) as the main ingredients.
* Only Vegetarian entries please. Eggs are allowed in baking.
* Use of logo is appreciated as it helps spread the word.
* Link to my event announcement page and Vardhini's announcement page.
* Archived entries are accepted as long as they are linked with both announcements.
* Link all the recipes in the linky tool I have provided.
*If you are not able to link your recipes or if you a non-blogger please feel free to send in your recipes to anu (dot) healthykitchen (at) gmail (dot) com.

Pressure Cooked Plantain/Nethram Pazham

Living in Dubai, i have got lot of Keralite Friends. I Love their Food, so Aromatic n Delicious. One among them, is this easy recipe of Pressure-cooked Plantain/ Nethram Pazham. Many of my friends serve this as a Evening Snack for their kids and swear by the Benefits of this.
Though my kiddo was a bit hesitant to have it, i cajoled him to try it atleast, then he had half the fruit, that itself is a big success.

Ingredients
1 Plantain/Nethram Pazham
1-2 tsp Brown Sugar
1 tbsp Ghee

Method

  • Take Nethram Pazham/Plaintain, make 3-4 slits on top, and pressure Cook for one whistle or steam-cook for 15 minutes.
  • Once the pressure releases, Remove the Banana Skin, Cut it in two pieces.
  • Sprinkle Brown Sugar and top it with some Ghee and Serve Warm.
Sending this to Kids Delight - Evening Snacks, hosted by Vardhini of Cooks joy, event by Srivalli.
