Mocha Chocolate Muffins

I bookmarked this Mocha muffins from Sailusfood before a couple of weeks. She was baking those for the holidays. I immediately fell for the exquisite coffee flavor coupled with chocolate. Decided to try those last week since we were planning to visit our friends over the weekend.



Ingredients:
Makes - about 12 medium muffins
All Purpose Flour/Maida - 2 cups
Sugar - 1 cup + 2 tbsp
Butter - 1/2

Semiya Upma/Vermicelli Upma

A Simple and Quickie Breakfast Menu.As mentioned in my earlier post, I always keep frozen veggies handy, to make my work easy.  I have used only Capsicum, Peas and Corn in this Recipe, since that 's what i had @ home. You can add Potatoes, Cauliflower, Carrots, etc.  To make the job even more easier, i store roasted vermicelli in my pantry. When i get my monthly provisions, i do all Roasting, grinding thingies a day, this makes job a lot easier in the Kitchen!!!! 


Ingredients
2 cups Roasted Vermicelli, Loosely Packed
3-4 Green chillies
1 Large Onion, Chopped
1/4 cup Peas
1/4 cup Corn
1 Large Capsicum, Thinly sliced
Salt to taste
1/2 tsp Coriander Powder
2 Sprigs Curry Leaves
Hing, turmeric each a pinch
Fresh Coriander leaves, Ginger Juliennes for Garnishing


Method
Heat oil in a Kadai, Splutter Mustard Seeds, Add Green Chillies and Curry Leaves. Add Onions and Saute till translucent. Add Rest of the Veggies and Saute well. Add 2-3 cups of Water and add Salt. Let the Water boil, Simmer the flame and add the roasted Vermicelli and Mix well. Let it cook, in Simmer flame, till the water dries up, you see thne vermicelli cooking up Soft and not sticking to the pan. Put the flame off, add the garnish and Keep it close for 5-10 Minutes. Serve Hot with a Chutney of your choice, We had it with Tomato Sauce!!!!

Komola Kheer/Orange Kheer

Juicy Oranges in Creamy Milk Pudding ummmmaaahhhhh!!!! Saw this Kheer @ Divine Taste, immediately bookmarked it!!!!! Made this for the Weekend, it was amazing!!!!! Oranges soaked well in Creamy Milk!!!! it was divine!!!! I followed Anu's Recipe Word by Word!!! Please follow the link for the recipe!!!!

Ingredients
2 Litres Full Cream Milk
4 Large Juicy Oranges
8-10 tbsp Sugar
1 tsp Cardamom Powder
Few strands of Saffron (i didnt use this!!!)
Pistachiao for Garnishing!!! ( i have used almond flakes)

Method
In a Heavy Bottom Pan, Boil Milk, till it reduces to half its content. Take care not to Burn the Milk. I added 2 spoons to it (Lataji's Idea, While making Khoa for Gulab Jamuns). Add Sugar, Cardamom Powder and Saffron to it now. Mix Well. Turn it off when the milk turns that Creamy Yellow!!!! Let it Cool.
Meanwhile, Peel the Oranges, remove that White layer, Skin and the seeds. Add it to the Cooled Down Milk!!!! Refrigerate and Enjoy it Chill!!!!!!! It was heavenly to taste, those juicy oranges, soaked up in the Milk!!!! Divine!!!!! Thanks to Anushruti for Sharing this yummylicious Kheer!!!!
