Strawberry Kiwi Fruit Curry Whole Wheat Couscous


I love to eat couscous a lot and it's very very easy to make, just takes 5 mins and it takes up all the flavors that we want to use in the recipe. This time I got plain whole wheat couscous and didn't know what spices of vegetables to use....suddenly this idea of why not make it light for dinner with fruits. I should tell you it was awesome, very flavorful from the curry powder and refreshing from the fruits. First I was not sure whether Anush would have it, because he does not like kiwi, so I mixed it well and he didn't know it was there. What all we need to do to cheat on kids and to make them eat. Parenting becomes tough if kids are picky. To say the truth Anush is not much picky but, as a mom I an trying to make him eat all at least once, because he never tries new things, so that it would be easy for him later.

This is very light but healthy way to have breakfast with a combination of fiber in whole wheat and fruits like strawberry which is rich in antioxidants and kiwi fruit - high in Vitamin C. 

Ingredients:

2 cups Whole Wheat Couscous 
3 cups of water
1 tsp Curry Powder
Salt and Pepper to taste
1 cup fresh/frozen Strawberries chopped to bite size pieces
1 cup fresh/frozen Kiwi chopped to bite size pieces
1 tsp Honey

Method:

1. In a pan add the curry powder and saute it in low flame until the aroma of the spices come out.
2. Add the water to it, add salt and pepper and bring it to a boil covered with a lid.
3. Now simmer the flame and add the couscous and stir once, off the flame and cover it and remove the pan from the stove and allow it to rest for about 5 mins.
4. This will help the couscous to cook through.
5. After 5 mins open the lid and fluff up the couscous gently with a fork and allow it to get bit warm.
6. Now add the fruits and honey, mix well and serve it and enjoy your healthy breakfast in minutes.
