Curried Fingerling Potato Fry


Potatoes are one of my favorite snack food of all times. Here in the US, we get so many varieties and colors of potatoes make me so happy. I also love to bake potatoes. Talking about potato varieties, fingerling potatoes are very nice for just bake to crunchy in the oven and as well as stove top. They are kind of firm and shaped like a finger and cook very soon and also turns very crispy with the skin on. So I thought of stir frying the potatoes on stove top with some mild curry flavor.

Ingredients:

1 lb Fingerling Potatoes quartered with skin on
2 tbsp Curry powder
1 tsp Cumin powder
1 tsp Coriander powder
Salt and Pepper to taste
1/2 tsp Onion powder
1/2 tsp Garlic powder
1/4 tsp Garam masala powder (optional)
1 tsp Oil


Method:

1. In a bowl add the potatoes and add all the ingredients (spices) and coat the masala well to the potatoes.
2. In a saute pan add oil and when it's hot add the potatoes and cook it for a min on high flame, now reduce the flame to medium and cover and cook it until the potatoes are cooked, make sure you stir it occasionally, no need to add water.
3. Now when the potatoes are almost cooked, open the lid and again increase the flame to medium high and saute the potatoes gently without breaking them until they become crispy. Make sure you don't burn the spices.
4. Serve this hot as a side dish.
