Broccoli Carrot Upma


Today Anush and me got up late in the morning and the climate was also not so good, it was cloudy and dull. We both didn't feel like eating a big breakfast. So I thought upma will be the right choice, which will be warm enough, but didn't want to make it unhealthy, so thought of using broccoli and carrot combination. Tried this recipe for the first time, we both liked it.
You can also substitute rawa with corn meal or cracked wheat.

Ingredients:

1 cup Rawa/Corn Meal (yellow or white)
2-3 Carrots washed, peeled and grated
1 head Broccoli washed and cut into florets. 
1 Green Chili chopped
(Note: please don't throw the broccoli stem, it's the best part of broccoli, we need to skin off with a peeler or knife and use the tender inside part of the broccoli stem)
1 tsp Tomato paste
1 tsp Sugar
Salt to taste
1 tsp Oil/Ghee
2 cups water

Method:

1. In a pan add 1/2 tsp oil or ghee and roast the raw on low flame for about 4-5 mins.
2. Transfer this to a plate and let it cool.
3. In the same pan add rest of the oil, broccoli and saute it for a 2-3 mins. 
4. Now add tomato paste, grated carrot and add 2 cups of water, sugar, salt and green chilies and bring it to a boil.
5. Now reduce to flame to very low and slowly add the rawa, stirring continuously so that no lumps are formed.
6. Cover and let it cook in the steam for about 5-7 mins or until the rawa is cooked, stir once or twice in between.

7. Serve this warm with your choice of chutney or it tastes good without any chutney too.
