Broken Wheat Kheer

This kheer I wanted to try for a long time. So I am taking this opportunity to cook this for the vinayaka chaturthi festival. I thought this would be different from the regular kheer and yet keeping it healthy. I love broken wheat it has a very nice earthy flavor and texture, not so starchy but right to make kheer out of it.

1/2 cup Broken Wheat washed and water drained
2 cups Milk
1/2 cup Sugar
1/4 tsp Cardamon powder
1/4 cup Cashew Nuts
1/4 cup golden Raisins
1/2 tsp Ghee (clarified butter)


1. In a pan add ghee, when it's medium hot add the cashew nuts and saute it until slightly brown, add the raisins and off the flame and stir it for a min or two. Allow it to cool.
2. In a heavy bottom pan add milk and broken wheat and cook it for about 25-30 mins on medium flame and keep stirring it occasionally.
3. When the broken wheat is almost cooked add the sugar and cardamon powder and stir it until the sugar is dissolved and the right consistency of kheer is achieved.
4. Add the roasted cashew nuts and raisins. Serve it warm or cold.
