Onam Sadya - Broccoli and Red Cabbage Thoran


I previously made broccoli thoran and some days back I made red cabbage thoran too. One day I instantly thought of making this red cabbage thoran as I did not have any other veggie to cook as a side dish. When I saw this red cabbage, I thought as it is also a cabbage, why not make the same thoran of kerala style. But for Onam sadya, I wanted to make this thoran which would be a nice healthy alternative and very colorful and unique and different from the usual ones. So combined both...which was very much liked by everyone for the beautiful color combination, taste and of course for the use of healthy ingredients.

Ingredients:

1/4 head of Red Cabbage chopped or grated fine
1 medium size head of Broccoli grated or chopped fine
1 small Onion
1 tsp Ginger grated
1/4 cup desiccated Coconut or fresh grated Coconut
1-2 Green Chilies sliced lengthwise
1/4 tsp Turmeric powder
Salt to taste
1/2 tsp Mustard seeds
5-6 Curry leaves
1/2 tsp Oil

Method:

1. In a mixing bowl combine, veggies - cabbage and broccoli, onion, coconut, salt, curry leaves, turmeric powder and ginger and mix them well. This will help the water in the veggies and onions to come out and cook the thoran without adding any water to it.
2.In a sauce pan or kadai add oil and when it's hot enough add the mustard seeds.
3. Add the veggie mixture and saute it until the seasoning is well coated and mixed, then reduce the flame to medium low and cover it with a lid and cook for about 5-6 mins or until the broccoli and cabbage are 3/4 th cooked but still retain their bright green and purple color.
4. Off the flame and remove the lid, so that it does not cook more and the color does not change.
5. Serve this as a side dish for any rice recipes.
