Tomato Veggie Pulav


Today I am making festival recipes for Vinayaka Chaturthi and didn't want to make a big menu for lunch and wanted to keep it simple. So thought of this quick one pot meal.

Ingredients:

1 cup mixed Veggies frozen (I used peas, carrot, beans and corn)
2 cups of Basmati Rice
3 cups of Water
Salt to taste
Whole Garam Masala (2 Green Cardamon, 2 Bay Leaves, 5 Cloves, 1 Cinnamon Stick)
1/2 tsp Ginger-Garlic paste
1 tbsp Tomato paste
1 small onion sliced
1/2 tsp Cumin seeds
1 tsp Ghee (Clarified Butter)

Method:

1. In a pan add ghee and when it's hot add all the whole garam masala and saute it for a min.
2. Add the rice, salt, onion, mixed veggies and saute it for about 5 mins.


3. Transfer this into a rice cooker bowl, add the ginger-garlic paste and tomato paste and 3 cups of hot water. Stir well and cook it for about 20 mins or until the rice cooker beeps when it's done. (You might want to check the rice cooker, so that the bottom of the rice does not burn).
